2019 Claret, Columbia Valley
This wine is a blend of Cabernet Sauvignon, Petit Verdot, Merlot, and Malbec (25% each). The 2019 fruit from the Columbia Valley arrived slightly more ripe than the Pinot Noir from Willamette Valley and as a result this wine is very nicely balanced with intense fruit-forward flavors and aromatics. During barrel aging, the lees with stirred frequently to build silky texture in the wine.
A Bordeaux blend of four varietals with aromas of jammy dark and red fruit and flavors of cranberry, cherry, tobacco and spice.
Bison steak tartine with basil paprika butter, Chipotle grilled filet mignon with mango chutney
