Wine Spotlight – 2024 Sparkling Chardonnay

Unlike many of the most well-known wines of Italy, Barbera is the name of a grape variety, not a place.
Our 2024 Estate Sparkling Chardonay is a perfect wine for your holiday celebrations! It’s light and refreshing with just the right amount of bubbles. All of the fruit is from our Carlton Estate.
Tasting Notes:
Aromas of green apple, Bosc pear, with hints of white peach and citrus. The mouth feel is slightly creamy with crispness on the finish.
Food Pairing Ideas:
Sushi. Scallops in a lemon butter sauce. Raw oysters. Peaches and tomatoes with burrata and hot Sauce. Panna cotta with poached pears.
2020 Late Harvest Semillon

Semillon is a white wine produced from the grape variety of the same name. It’s most frequently associated with the white wines of Bordeaux. Many of the great sweet wines of Sauternes also rely on Semillon as part of their blend.
Our 2020 Late Harvest Semillon is a dessert wine that is not syrupy and not super sweet like many late harvest or ice wines. Instead, it is very balanced on the palate and beautifully aromatic. Perfect for dessert during your holiday celebrations!
Tasting Notes:
Aromas of kiwi, honeysuckle and melon with a hint of spicy citrus; flavors of quince, fig and stone fruit.
Food Pairing Ideas:
A sweet dessert such as pumpkin pie or Crème Brulé. Foie Gras, blue cheese and rye crackers. Apple tarte with apricot glaze. Late Harvest Cake. (Recipe Below!)

Add to your wine tasting experience with our Tapas-style Happy Hour, with Chef Sami Marquez! Spanish-driven shareable plates with a Farm to Table approach, featuring Live-Grilled and Local ingredients from our neighboring farmers.
This menu features 100% gluten-free and dairy-free, with the exception of the side grilled bread.
Reservations are highly encouraged and will ensure your table, but food will be first-come, first first-served basis, and available until we sell out! Food & wine sold separately. No ticket sales for this event.
